Add all ingredients to a blender and blend until smooth, adding additional oil or water based on desired thickness. Hold for service.
Chili Lime Ceviche
Add lime juice, chili lime seasoning, and garlic to a bowl and combine well. Add fish, serrano pepper, onion, cilantro, tomatoes, and cucumber, and gently mix.
Allow to marinate in the refrigerator for 30-45 minutes or until fish is desired firmness. Hold for service.
Service
On a plate, add 1/3 of a cup of avocado cream and spread evenly on the plate. To a ramekin or ring mold, add 1 cup of ceviche per portion and place on top of avocado cream. Sprinkle with additional chili lime seasoning.
