Servings 4 8 24 48 80 100 Chicken & Vegetable Filling | Serves 4 1 tbsp canola oil 1 pound chicken breast, boneless, skinless 4 oz yellow onion, julienned 1 pint Kitchen Basics® Unsalted Chicken Stock 4 oz bell peppers, tricolor, diced 4 tsps McCormick Culinary ® Perfect Pinch Zesty Pepper Seasoning Blend 1 tsp McCormick Culinary ® Perfect Pinch Garlic & Herb Seasoning, Salt Free Tortillas & Cheese | Serves 4 4 eaches Flour Tortilla, 6" 2/3 cup Colby Jack Cheese, reduced fat, shredded Garnish | Serves 4 1 cup Lettuce, shredded 1 cup tomatoes, small dice Procedure For the Chicken & Vegetable Filling: In a skillet on medium-high heat, sear chicken breast. Reduce heat and add onions and peppers; cook until softened. Add stock, cover and simmer until chicken just begins to pull apart, an internal temperature of 185ºF. Strain contents and reserve liquid. Pull chicken with onions, then mix in both seasoning blends. For the Assembly & Garnish: Preheat and grease flat grill to 350°F. Place tortillas on grill then distribute cheese evenly and top with an even amount of chicken mixture. When cheese is melted, fold in half and cut in quarters. Serve with lettuce and tomato.
