Get your smokers ready! Lighting up the eyes and palates of diners comes a spicy appetizer recipe from Nashville’s Chef Levon Wallace. Rubbed with McCormick Culinary Cajun Seasoning, Culinary Black Pepper and two tablespoons of Kosher Salt, guests won’t believe their taste buds as they dig into this smokin’ brisket-full feature, served atop spicy waffle fries with melted white cheddar cheese. For even more engaging flavor, this dish is garnished with sliced scallions and chopped hot Giardiniera. Skillets up!
Brush brisket with vegetable oil until well coated.
Rub with McCormick Culinary Cajun Seasoning, Kosher Salt and McCormick Culinary Cracked Black Pepper.
Place in a smoker and smoke for 2-3 hours or until tender.
Chop brisket against the grain and reserve warm.
For the Spicy Waffle Fries:
Fry the waffle fries at 350F until golden brown and crisp.
Drain excess oil and toss with Zatarain's Creole Seasoning and Kosher salt.
For the Assembly & Serving:
Preheat a broiler or oven to 400F.
Place spicy waffle fries in a cast iron skillet or other oven proof dish.
Top with alternate layers of shredded white cheddar and smoked brisket.
Place in broiler for 2-3 minutes or until cheese is melted and bubbly and brisket is caramelized.
Top with chopped hot Giardiniera and sliced scallions.
Serve in the skillet.
