A burger with a Middle Eastern treatment - juicy lamb slathered with deeply flavored red pepper spread and a variety of fresh toppings.

Lamb Burger | Serves 4
- 1 pound Lamb, ground
- 1 1/2 tsps Fennel Seed
- 1 1/2 tsps Sea Salt Mediterranean Coarse Grind
- 2 tbsps McCormick Culinary ® Parsley Flakes
- 1 tbsp Red Onion, finely diced
Harissa Spread | Serves 4
- 2 cups Roasted Red Peppers, drained
- 3 tbsps Olive Oil
- 2 eaches Garlic cloves, minced
- 1/2 tsp Caraway Seed
- 1/2 tsp McCormick Culinary ® Coriander, Ground
- 1/4 tsp McCormick Culinary ® Red Pepper, Crushed
- 1/2 tsp Sea Salt Mediterranean Coarse Grind
For Build | Serves 4
- 4 eaches Brioche Buns, split
- 1 cup Spinach
- 1/4 cup Red Onion, sliced
- 1/4 cup Cucumber, sliced
- 1/2 cup Feta Cheese, crumbled
Procedure
For the Lamb Burger:
- Combine ground lamb with ground fennel seed, Mediterranean sea salt, parsley and red onion until evenly distributed.
- Form Patties into 4 equal parts, or desired size.
- Grill until desired doneness.
For Harissa Spread:
- In a blender, combine roasted red peppers, garlic, caraway, coriander, crushed red pepper flakes and salt.
- Drizzle in olive oil until smooth.
For the Build:
- Spread 2 tablespoons of Harissa spread on the base of the bun.
- Place spinach, cucumber slices, cooked burger, red onion and feta.
- Spread 2 more tablespoons of harissa spread on crown of bun. Top burger.
