5 pound Beef Tenderloin, trimmed and cleaned weight
Coarsely crack or grind peppercorns. Mix in a bowl with remaining seasonings, salt and spices.
Rub seasoning mixture over tenderloin.
Place beef tenderloin on a rack on a sheet pan. Roast for 40 to 50 minutes until beef reaches the desired temperature. Check with a thermometer as instructed in chefs notes below.
Remove from oven and allow to rest for 10-15 minutes before slicing.
Chef's Tip!
Check internal temperature of beef with a thermometer for desired doneness. For modern twist on the classic Au Poivre use the seasoning blend on grilled steaks, chicken and fish.
