In a small bowl whisk olive oil, lime juice, apple cider vinegar, lime zest, agave syrup, and chili lime seasoning, combine well and add jalapeno and red onion. Allow to marinate for 15 minutes before adding to watermelon salad.
Watermelon and Jalapeno Salad
Cut watermelon into 1/2" cubes or desired shape. Drain excess juice from watermelon as needed.
In a large bowl, combine watermelon, cotija cheese, cilantro, mint, and chili lime jalapenos and onions. Gently stir to combine and serve with additional sprinkling of Cholula Chili Lime seasoning.
Chef's Tip!
As watermelon salad sits, additional liquid will be drawn out from watermelon requiring draining before service.
