- 1 each White Cabbage, quartered, cored and sliced 1/4"
- 1 tbsp Kosher Salt
- 1 tbsp Canola Oil
- 1 each Yellow Onion, julienned
- 1 cup Apple Cider
- 2 tbsps Apple Cider Vinegar
- 1 tbsp McCormick Culinary ® Caraway Seeds
- 2 eaches McCormick Culinary ® Cinnamon Sticks
- 1/2 tsp McCormick Culinary ® Pure Vanilla Extract, Premium
- 1/2 cup Tart Apples, (Grannysmith, Honeycrisp), julienned
- To Taste McCormick Culinary ® Black Pepper, Whole , fresh cracked, garnish
Procedure
- Place cabbage in a bowl. Sprinkle with 1 Tablespoon of salt; mix well and let rest for 10 minutes.
- In a wide pot or rondeau, heat oil over medium-high heat. Add onions and fry until just browning.
- Add the cabbage and let cook for 2 more minutes.
- Add the apple cider, apple cider vinegar, caraway seeds, cinnamon sticks & vanilla.
- Bring to a simmer and let cook until reduced by half.
- Adjust seasoning with salt and fresh cracked black pepper.
