- 2 cups chicken, cooked, pulled
- 1/2 cup Sticky Sweet Legendary BarBQ Sauce
- 1 each lime, freshly juiced, reserved
- 1/2 tsp white distilled vinegar
- 2 cups quinoa, cooked
- 1 can black beans, 15 ounces, drained, rinsed
- 1 3/4 cups corn, grilled, cut
- 1/4 tsp McCormick Culinary ® Black Pepper, Table Grind
- 1 each avocado, cut into 1/2" cubes
- 1/2 cup cilantro , fresh, picked, leaves only
Procedure
For the Chicken:
- In a bowl, combine barbecue sauce, lime juice, vinegar, and pulled chicken. Mix well to combine. Set aside.
For Assembly, Garnish & Serving:
- In a large mason jar, layer quinoa, black beans, cilantro, corn, pulled chicken, avocado, and cilantro. Serve with lime wedges.
