- 1 can Thai Kitchen Coconut Milk
- 2 cups Kitchen Basics Chicken Stock, unsalted
- 1 piece Galangal Root, fresh, 1"
- 1 each Lemongrass, fresh, 2"
- 1 pound Chicken Breast, boneless, skinless, raw, 1" dice
- 1 cup White Button Mushrooms, sliced
- 2 tbsps Lime Juice
- 2 tbsps Thai Kitchen ® Premium Fish Sauce
- 2 tsps Soy Sauce
- 1/2 tsp McCormick Culinary ® Red Pepper, Crushed
- 1/4 cup Cilantro, fresh, leaves whole, picked
Procedure
- In a medium sauce pan, combine coconut milk, stock, ginger and lemongrass. Bring to a boil.
- Add chicken, mushrooms, lime juice, fish sauce, soy sauce and crushed red pepper.
- Reduce heat and simmer until chicken is cooked through.
- Portion into bowls and garnish with cilantro leaves.
Chef's Tip!
Can substitute fresh ginger if galangal is unavailable.
