- 1 cup Cashew Fruit Juice
- 1/4 cup Cashew Milk
- 2 tsp Cashew Butter
- 1 tbsp Sugar
- 1 tbsp Fresh Lemon Juice
- 1/4 cup Fresh Cilantro Leaves and Stems, coarsely chopped
- 1/4 tsp McCormick Culinary ® Pure Peppermint Extract
- 2 Fresh Cilantro
- 1 sprig Fresh Mint
- Lemon Peel

- Place cashew juice, cashew milk, cashew butter, sugar and lemon juice in blender and process on high speed until well blended.
- Add chopped cilantro and extract. Process on low speed 20 seconds.
- Strain mixture through fine mesh sieve. Pour into 2 ice filled tall beverage glasses. Garnish with sprigs of cilantro and mint, and twist of lemon.
Chef's Tip!
To make this a fun cocktail add 1/4 cup Cachaça to mixture when blending.
