In a bowl, combine ground chicken and first amount of McCormick Culinary Guacamole & More Seasoning Mix. Mix until seasoning is evenly distributed.
Form meat into 1 1/2 ounce meatballs and flatten into 1/2" thick patties. Hold refrigerated for service.
In a saucepot, over medium heat combine tomatoes and second amount of McCormick Culinary Guacamole & More Seasoning Mix. Bring to a simmer and remove from heat. Hold hot for service.
In a heavy bottom pot over high heat, bring chicken stock to a boil. Add the final amount of McCormick Culinary Guacamole & More Seasoning Mix, and couscous. Reduce heat and simmer until couscous is tender about 5-6 minutes.
Remove from heat and add avocado and arugula. Toss until evenly distributed. Hold refrigerated for service.
Service
Set grill to medium. For each serving, grill 3 patties until they reach an internal temperature of 165°F.
Plate 1 cup couscous and top with 1/4 cup of warm tomatoes and the grilled kofta.
Serve warm.
Chef's Tip!
The kofta can be skewered for a more traditional presentation.
