Create a Mole style barbecue with the simple addition of cocoa powder and chicken stock added to Cattlemen's.
Ingredients
Serves 12 servings
- cup Chicken thighs
- 1 Tbsp. Montreal Chicken Seasoning
- 1 cup Low sodium chicken stock
- 2 Tbsp. Cocoa powder
- 2 cups Cattlemens ® Smoky Base BBQ Sauce
Procedure
- Lightly season thighs with seasoning. Braise chicken in stock covered for 1/2 hour till done (165°). Pour off liquid, reduce to 1/2 cup and reserve.
- Blend the 1/2 cup liquid with cocoa and Cattlemen's® Smoky Base BBQ Sauce. Reserve.
- Uncover chicken and return to oven to crisp. Serve hot with hot mole BBQ sauce.
Chef's Tip!
Serve chicken meat in taco's or burritos or with vegetables and Spanish rice as a full meat.
The cocoa powder can be increased to further define the MoleSauce is also nice with a hint of melted creamy peanut butter.
