Bring cream to simmer in saucepan on medium-high heat. Cook until reduced by one-fourth
Whisk in horseradish, black pepper, hot sauce and cheese until well blended and smooth. Remove from heat. Cool completely. Transfer to airtight container. Hold refrigerated at least overnight or for service.
Service
Reheat sauce in small saucepan, stirring frequently. Serve over grilled steak or hot cooked pasta.
