Smoked spices take pickles to a whole new flavor level, lending a smoky note to the pickling liquid. Smoked curry powder and spices make for unforgettable cucumber and strawberry pickles.

- In a bowl combine cucumbers, strawberries, and onions. Toss to distribute and place in a sealable container. Set aside.
- In a saucepan combine vinegar, sugar, curry powder, salt, pickling spice, and mustard seed. Bring mixture to a boil, stirring to dissolve sugar and salt. Reduce heat to low and simmer 5 minutes. remove from heat and cool slightly.
- Strain into container with cucumber and strawberries. Refrigerate at least 2 hours or until ready to serve.
Chef's Tip!
If a smoker is unavailable, spices can be smoked on the stovetop. Spread 1 cup of fine wood chips in a cast-iron skillet. Heat until chips begin to smoke and reduce heat to low. Spread seasonings in a shallow dish and place over wood chips. Cover skillet and smoke 15-20 minutes. Remove from heat and allow to rest until cooled.
If neither option is available, add an additional teaspoon of smoked paprika to impart a smoky note to these pickles.
