Silky-smooth butternut squash soup is a hit on any fall menu. Treat guests to this version instead, made unique with the warm, vibrant twist of Harissa Seasoning. This recipe features our new Global Blends Harissa Seasoning.
Melt butter in a pot over medium heat. Add onions, cook and stir until softened.
Add butternut squash and harissa seasoning. Sauté until fragrant.
Add stock and maple syrup. Bring to a boil, reduce heat to low and cover. Simmer until squash is tender, stirring occasionally.
Once tender, puree soup in batches in a blender on high until smooth. Return to pot and stir in coconut milk. Cook over low heat until heated through. Serve hot or cool completely and refrigerate until needed.

This soup is delicious day of, or easily made ahead. Great for a twist on a traditional soup of the day or a shooter for an appetizer, this is a delicious and versatile recipe.
