In a bowl combine tomatoes, chipotle BBQ, and cilantro. Mix well and hold refrigerated for service.
Service
Set griddle to medium. For each serving toast 1 bun. Place 2 ounces of brisket on griddle. Flip once warmed and top with 1 ounce of Fire-Roasted Chipotle BBQ Sauce. Top with cheese to melt.
Place 1 scrambled egg on bottom of bun, top with prepared brisket. Cover with top bun and serve hot.
