Dip Ingredients | Serves 4
- 1 each Avocado, ripe
- 3 cups Spinach, fresh, chopped
- 1 cup Yogurt, plain, 5% milk fat
- 2 tbsps Lemon Juice, fresh squeezed
- 2 1/2 tsps Curry Powder Madras
- 3/4 tsp Kosher Salt
Dipper Ingredients | Serves 4
- 3 eaches Pita Bread, whole wheat or white, cut into pieces each
Procedure
For the Dip
- Combine avocado, spinach and yogurt. Puree for just a few seconds in a food processor.
- Hydrate curry and salt in lemon juice and combine with avocado spinach mixture. Hold refrigerated for service.
- Serve dip with pita bread dippers.
Chef's Tip!
To intensify the curry flavor, increase curry by 50%.
To intensify the lemon flavor, also add the zest of one lemon.
