A popular Mexican specialty, grilled corn is coated in mayo seasoned with McCormick® Culinary Taco Seasoning Mix and lime juice then topped with crumbled Cotija cheese.
4 each Ears Corn, on the cob, fresh, husked and cleaned
As Needed Olive Oil
6 tbsps Cotija Cheese, crumbled
Procedure
Prep
In a bowl, mix mayonnaise with taco seasoning and lime juice. Whisk well to combine. Hold for service.
Service
Set grill to medium-high. Brush each ear of corn with olive oil, as needed, and grill for 3 to 4 minutes on all sides, until corn is cooked and well charred on all sides.
Brush each ear with about 1 1/2 tablespoons seasoned mayonnaise and sprinkle with 1 1/2 tablespoons crumbled cheese. Serve immediately.
Chef's Tip!
Chopped cilantro makes a nice garnish. When cooking to order, par-grill corn, cool, and reheat on the grill to order.
