Try this traditional Caribbean Jerk Chicken served with a sweet mango salsa.

Jerk Chicken | Serves 4
- 1 1/2 pounds Chicken breast, boneless, skinless, cut into cutlets
- 1/4 cup Orange juice
- 1/4 cup Brown sugar
- 2 tbsps McCormick Culinary ® Caribbean Jerk Seasoning
- 2 tbsps Canola oil
Mango Salsa | Serves 4
- 1 cup Mango, diced (can sub frozen mango, thawed)
- 1 tbsp Red onion, small dice
- 1/4 cup Red and green bell pepper, diced
- 1 tbsp Scallions, thinly sliced
- 2 tbsps Lime juice, freshly squeezed
- 1/2 tsp McCormick Culinary ® Caribbean Jerk Seasoning
- 1/4 tbsp McCormick Culinary ® Sea Salt, Mediterranean Fine Grind
Procedure
Mango Salsa
- Combine all ingredients in a small bowl until well mixed.
Jerk Chicken
- Combine orange juice, brown sugar, jerk seasoning, and canola oil in a small bowl. Reserve half. Marinate chicken in remaining mixture for 30 minutes.
- Remove chicken from marinade and grill for 3-4 minutes per side, or until cooked through.
Service- Brush cooked chicken with reserved marinade. Serve with rice and mango salsa.
